Easy Crustless Pecan Pie

This will be one of Mom's contributions to Turkey Day Dinner. She has been making this pecan pie for years, even years before I went gluten-free. She just doesn't like crust. I don't know where it originally came from, but this recipe is so easy, and so good.

Easy Crustless Pecan Pie

Ingredients:

1 cup sugar
1 cup light corn syrup
6 eggs
2 Tbs margarine
2 tsp vanilla
1 1/2 cups pecans

Mix all ingredients in pie dish. Bake in a preheated 325 degree oven for 45 minutes.

Yeah, pecan pie REALLY does NOT need a crust with all that gooey pecan goodness inside! That sounds delicious! I'd add a layer of chocolate chips on the bottom of the pan! MMMMmmmm.. then i'd have to hit the gym for 2 weeks straight! ;-)

THANK YOU, THANK YOU, THANK YOU. I JUST RECENTLY FOUND OUT THAT I HAVE CELIAC DISEASE AND THOUGHT I WAS GOING TO HAVE TO SUFFER THROUGH THANKSGIVING AND CHRISTMAS WITHOUT PECAN PIE (SAY IT ISN'T SO). NOW, THAT IS NOT THE CASE AND THIS 67 YEAR OLD IS DANCING AGAIN, WITH JOY. GOD BLESS YOU.

It is surprising to see no more recent comments about this terrific recipe. I was diagnosed with celiac just days before Thanksgiving and had a rather confused, sad holiday. Not so this Christmas! We made this pie exactly as written and gobbled it up. So rich and sweet--to die for! Subsequent pieces we garnished with vanilla ice cream and also spirited peaches one time. It is sweet enough that I think half the sugar would suffice, but if you're going to be decadent, why not go all the way with it?
